Angel Hair Pasta With Arugula, Radicchio And Tomato
***FOR THE SAUCE***
2 c extra virgin olive oil
1/3 c garlic; minced
1/3 c fresh basil leaves; minced
1 tb dried oregano
salt and pepper
***FOR THE PASTA***
1 lb imported Italian dried angel

6 fresh plum tomatoes; peeled,
- seeded and
1 lg fresh radicchio; coarsely
-- (about 3 cups)
3 c packed arugula; coarsely
rice wine vinegar to taste
Make the sauce: In a saucepan over low heat add the olive oil.
When the oil is warm add the garlic, the basil and the oregano and seep at
low heat until the flavors infuse (about 10 minutes). Add salt and pepper to
taste and keep warm.
Make the pasta: In a large pot with 8 quarts of rapidly boiling salted
water add the dried pasta, stirring vigorously for 2 minutes. Continue boiling
for about 6 minutes (tasting for doneness).
When the pasta is still firm to the bite, drain immediately in a large
colander. Toss the pasta in the colander to remove excess water.
Place the pasta in a large serving bowl and add the sauce. Toss well and then add the
plum tomatoes, the radicchio and the arugula and toss well. Add rice wine vinegar
to taste and serve.
Serves 4 as a main course.
