Harvest Cabbage Soup with Sausage


1 lb. Turkey Italian sausage, chopped

1 medium onion, chopped

3 cups chicken stock or broth

1 cup water

2 cups chopped carrots

4 cups cubed potatoes

8 cups chopped cabbage

1 tsp each oregano & thyme

½ tsp cumin

2 cups chopped fresh tomatoes

¼ cup tomato paste

salt & pepper to taste

1/3 cup chopped fresh basil


In a large pot over mediumheat, cook the sausage and onions until onions are soft and sausage is cooked through, about 10 minutes. Add the chicken stock, water, carrots, potatoes, cabbage, oregano, thyme and cumin.

Bring to a boil, stir, then simmer, covered, for about 45 minutes or until potatoes and carrots are done.

Stir in the tomatoes and tomato paste. Add salt and pepper to taste and simmer, covered for about 15 minutes or more.

Turn off heat and stir in the basil. Let sit for several minutes. Serve. Garnish with a dab of sour cream.
