1. Cut the bok choi lengthwise in half.
2. Heat oil in a large skillet over medium high heat.
3. Add the minced ginger and garlic and cook for a half minute to 1 minute.
3. Add the bok choi, cut side down, and brown for 2 minutes.
4. Turn bok choi over and season with salt and pepper. Add the soy sauce
to the pan, coating the bok choi.
5. Reduce heat to medium low. Cover pan and cook until the bok choy is tender,
no more than 3 or 4 minutes. Add water if needed.
6. Drizzle with sesame oil and serve.
