Roasted Garlic Beet Timbales

Serves 4

Ingredients

2 tbsp olive oil
6 medium to large beets, quartered
salt
ground black pepper
1 1/2 large heads garlic, peeled, cloves separated
1 tbsp Balsamic vinegar
2 tbsp raspberry vinegar
2 tbsp dry red wine 1 tbsp sugar 1 tbsp softened butter

Preparation

1. Preheat oven to 400 F. In a 9-inch glass baking dish, toss olive oil
and beets. Sprinkle with salt and pepper to taste. Place in oven for
45 minutes.

2. Toss in garlic cloves and bake another 45 minutes, tossing
occasionally, until beets are tender.

3. Place in blender and add remaining ingredients. Puree until smooth.

4. Salt and pepper to taste.
