Russian Spinach Soup
Serves 8 - 10 as main course
Ingredients
4 quarts water
1 medium carrot, thinly sliced
8 large potatoes, cubed
1 stalk celery, thinly sliced
1 small parsnip
2 bunches fresh spinach, coarsely chopped
1 large green pepper, chopped
2 large yellow onion, chopped
1 bunch parsley, finely chopped
dill and salt and pepper to taste
Directions
1. Bring water to a boil in a large pot. Add carrots, potatoes, celery, and parsnip (remove
before serving). Cook until tender.
2. In skillet, sauté pepper and onion in a small amount of olive oil until edges begin to brown. Add to
soup. Add spinach and parsley. Turn off heat.
3. Allow to stand about 10 more minutes then add dill, salt
and pepper to taste. Garnish with a dab of sour cream.
