Summer Vegetable Salad

Serves 6 as a side dish

Ingredients

2 cups diced zucchini
2 cups cherry tomatoes, halved
1 cup diced English cucumber
1 cup corn kernels
1 red bell pepper, diced
1 cup parsley, finely chopped
½ cup basil leaves, sliced into thin ribbons
1 batch garlic vinaigrette
salt and pepper, to taste
¼ cup pickled jalapeños (optional for serving)
¼ cup pitted kalamata olives (optional for serving)
½ cup feta (optional for serving)

Preparation

Toss the vegetables with the dressing in a serving bowl. Season with salt and freshly ground pepper. Top off with one of the optional ingredients.
