Pineapple Glazed Carrots

Serves 4

Ingredients

2 cups peeled carrots
1/2 cup boiling water
1 (8 oz.) can crushed pineapple in its own juice
2 tsp cornstarch
1/8 tsp cinnamon
1 tsp brown sugar
1 Tbsp orange peel

Directions

1. Slice carrots into 1/4" rounds. Place carrots and boiling water in casserole dish. Cover and microwave at 100% until tender, 6-8 minutes.

2. Whisk in remaining ingredients in a 4-cup measure.

3. Microwave uncovered at 100% for 5 minutes or until thickened, stirring halfway through cooking time.

4. Drain carrots, then toss with sauce and serve immediately.
